For ALBA’s artisanal pizzas, we use nothing but pure sourdough, fueled by our behind-the-scenes powerhouse: our starter named Aulus. He is 160 years old, and is fed every day with Tumminia ancient grain flour. Aulus relies on natural fermentation using wild yeasts and lactobacillus bacteria present in the environment. This process enhances the nutritional profile of the dough and contributes to its distinct flavor and texture.
