Our pizza dough is a recipe that blends five different high-quality flour varieties, fueled by our one-of-a-kind sourdough starter named Aulus. We believe in the power of ancient grains. Therefore we import ours directly from Sicily and from local Swiss wheat varieties, gently milled by family-run milling masters.
For ALBA’s artisanal pizzas, we use nothing but pure sourdough, without any additives or mass-produced yeasts. This means referring back to ancient baking techniques used in the pre-industrialization era. Our sourdough starter is 160 years old, and is fed every day with Tumminia ancient grain flour.
