Molini del Ponte, the organic grain mill run by bread baker, pasta maker, and miller Filippo Drago and his family, is a Sicilian treasure revolutionizing the way Sicily thinks about heritage grains. We work with Molini del Ponte because they scrupulously preserve the authenticity of Sicilian grains by using state-of-the-art optical sorters, ensuring only the finest kernels make it into their flours. This results in a product that embodies the roots of Sicily's agricultural legacy.
